I'm not a baker. Very, very bad at baking. The Baking Gods are not aligned with my aura or something like that. The Computer Gods diss me, too, as do the Candy Gods and the Broccoli Gods. Any help would be greatly appreciated.

By the way, RVB, how was your colon? Polyps? I drank gin when

I had my first. Definately a clear liquid, darling. Martinis, too (sans olive, of course). When I woke up I sucked down apple juice until I bloated and floated out of the hospital into the awaiting arms of my alarmed husband. The dear.

Here are some bread recipes that I enjoy.

ENGLISH MUFFIN BREAD (One of my favourites.)

This recipe can be doubled.

Be sure to spray the pan with Pam or the bread will stick.

1 cup minus 1 tbsp. water
1/4 tsp baking soda
1 t sugar
2 tbsps. skim milk powder
1 tsp. salt
2 cups bread flour
2 tsps. granulated yeast

Add ingredients to bread machine in the order suggested for the machine. Choose either regular or light crust. This bread is great for toast.



BAGELS

3/4 cup (200 ml) water
2 cups (500 ml) all purpose flour
1 tsp (5 ml) salt
2 tsp (10 ml) sugar
1/2 tsp (2 ml) yeast
1 tbsp. (15 ml) poppy, caraway or sesame seeds for topping

Select white, dough, and small batch on bread machine. When complete
remove dough and place on floured surface. Cover and let rest for 5
minutes. Shape dough into 8 balls; make a hole in the centre of each
ball with your thumbs, about the size of a quarter. Place on greased baking pan; cover and let rise in a warm place about 20 minutes. Fill a large deep saucepan with water and 1 tbsp (15 ml) of sugar and bring to a boil. Force holes open again if they begin to close. Cook bagels in water for 30 seconds each side; remove with slotted spoon and drain on wire rack. Return to greased baking sheet; brush with egg glaze (beaten egg with a little water) and sprinkle with seeds. Bake at 400°F for 20 to 25 minutes or until browned. Serve warm.

OATMEAL BREAD.....recipe for the bread machine

1 cup buttermilk or 1 cup milk with 1 tsp lemon juice or vinegar
4 T butter
1 1/2 t salt
2 T sugar
1 cup quick oats
2 cups bread flour
2 t yeast.

Add all ingredients to bread machine in the order suggested. Choose either regular or light crust. Press start.


Title: Whole Wheat Bagel Bread (Excellent)

1 1/2 lb loaf

1 1/2 ts Active dry yeast
3 c Whole wheat flour
2 ts Salt
3 tb Honey
1 c Warm water

Add ingredients according to the directions in your machine's manual. Either let the machine do all the work or set bread machine to dough setting. At the end of the dough cycle shape the bread into a round loaf. Let rise until double in bulk. Brush with an egg white wash and sprinkle with poppy or sesame seeds.
Bake at 375° F for 25 to 30 minutes.

I made this using 2 cups whole wheat flour & 1 cup all purpose flour with good success.

Focaccia

To make in bread machine......Add ingredients in the order given......come back when dough is ready......shape etc.

1 c warm water
1 T liquid honey
2 t active dry yeast
2 1/2 c all purpose flour
2 T semolina or cornmeal
2 T olive oil
1 1/4 t salt

Topping

2 T olive oil
2 cloves garlic, minced
1/4 t each salt and pepper
2 T grated Romano cheese

In large bowl, whisk warm water with sugar. Sprinkle in yeast; let stand for 10 minutes or until frothy. Whisk in oil and salt. With wooden spoon, briskly stir in 2 1/4 cups flour to make a soft dough.

Turn out onto lightly floured surface; knead for 8 to 10 minutes, adding enough of the remaining flour to make dough smooth and elastic. Place in lightly greased bowl, turning to grease all over. Cover with plastic wrap; let rise in a warm, draft-free spot for about 45 minutes, or until double in bulk. Punch down dough.

Stretch into 12 x 8 inch oblongs about 1/2 inch thick. Place dough on greased baking sheet and let rest for 10 minutes.

Topping: With back of spoon press indentations over dough. Drizzle hollows with oil; sprinkle with garlic, salt and pepper. Sprinkle cheese over all. Cover lightly and let rise for 20 minutes or until about 3/4 inch thick.

Bake on lowest rack in 375 degree F oven for 15 - 20 minutes or until golden.

Grape/Blue Cheese/Walnut Focaccia

1 recipe focaccia dough
1 Tbs. olive oil
1/4 pound seedless green grapes
1/4 pound seedless red grapes
4 ozs. Stilton cheese or other good quality bleu cheese, crumbled
1 cup walnuts
1 egg, beaten

Preheat the oven to 375 degrees. Using your fingers, press the focaccia dough out into a 12-inch circle, about 1/4 -inch thick, onto a round baking sheet (I use a rectangular cookie sheet). Brush with olive oil. Season the bread with salt and white pepper. Press the grapes into the dough, leaving a 1-inch border around the edges. Sprinkle the cheese and walnuts over the dough.

Brush the edges of the dough with the egg wash. Bake for 25 minutes or until golden brown. Place on wooden board and slice.

Sun Dried Tomato, Herb, and Parmesan Bread (28Dec)

9 oz. water
2 3/4 cups bread flour
2 tbls. dry milk
1 tbls. sugar
1 tsp. salt
3 tbls. fresh grated parmesan cheese
2 tbls. sun dried tomato bits or pieces (chopped)
1 tsp. oregano
1 tsp. thyme
1 tsp. basil
2 tbls. butter
2 tsp. active dry yeast

Place the ingredients in the pan in the order given. Works better with medium or dark crust. It smells like pizza when it's baking.

Or, make dough. Place dough in bread pan (1 large or 2 small). Please pan(s) in a draft free place and cover with tea cloth. Let rise till double in size, about 30 to 40 minutes. Bake in oven until done, about 25 minutes for small loaves and 45 minutes for a large loaf.

Try it with mozzarella and/or provolone and black olives under the broiler for an out of this world lunch.

 
Not T&T but I copied this link when I was looking for new bread machine recipes.

I find that I cannot just dump the ingredients in the machine and just leave it to mix and bake. I always have to check on it at least once and add more water or flour during the mixing or the bread does not come out right.
