Been busy in the kitchen, triple batch of Cathy's Crock pot Cassoulet.

This sounds delicious, what a nice thing to make for guests stopping by and traveling!

I have been busy in the kitchen too. We planned for Thanksgiving down to the last piece of spinach (as my dad used to say). Menu selected, grocery list made, dog getting groomed, mom groomed, house clean...the whole deal. Young son and family called, "can we come up a week early?" OK son, that will be fine. Plus they will be here an extra day! More meals.

Dog grooming appt changed, no housekeeper this week, so it is on me, carpets were cleaned yesterday, so they are still wet today, we forgot the dogs appointment today, (luckily she said, "that is OK, bring her in") carpet guy forgot appointment with us yesterday, we called and he came in the afternoon which threw us totally off, gas fireplace acting up, service man coming out today.
What a mess, I feel so totally inadequate right now. But I did get the gravy made this morning, I have salad greens washed and dried, pomegranate arils pulled and cleaned, picking up turkey today, will get the dry rub on it and put it in fridge to air dry skin., so all is not so bad. I still have to think of two breakfasts, but will do brunch instead so I can cut out one meal for the extra day.
Dressing, mashed spuds, and green beans will be prepped on Wed. and Thurs. I cook dressing in slow cooker and reheat mashed spuds in slow cooker, they both come out beautifully.

It has to be the Super Moon causing all this craziness!

 
YAY!!! I know it is crazy when you have a plan, but I am so happy for you to have

your son come a week early! Kudos to you! He would not want you to be stressed, he just wants a hug!!! Don't fret about the last spinach, seriously, you should take pride that your son has time for the holidays and wants to spend it w. you....dirty dishes, dirty carpet and no breakfast! All good with him.

I'll start off the suggestions with this Chili Rellano Casserole that's in T&T. It's really delicious, it can be assembled before and the custer poured on in the morning. Cheese made it and increased the size for 12 servings and the link for that is in it. I can also vouch for the Croissant Casserole in T&T breakfast. I add mushrooms and leeks to it.

Cheddar and Bacon Cornmeal Waffle Sandwiches with Maple Mustard

We love these. Kind of a grown up kind of way to eat waffles from Bobby Flay. I do make a slight change with the maple mustard. I prefer the taste with equal parts of each not so much on the mustard side. And I don't always make the corn meal waffles. Just bisquick is great too. When I make waffles we always have two extra from the batter and I make these sandwiches with them. You could even make the waffles now. We aren't big eaters so I cut one in half and that is a perfect size for us. They are very filling.

the Chile Rellenos and Breakfast Casserole look good for this event. I love the baked potato breakfast, as well! Very fun stuff.

Things are looking up today and I am feeling better about getting this cooking done. Everything fell into place this afternoon..
I always give our kids a three week choice about when they want to come for the holidays....this way they can also enjoy the other parents, or grandparents invites. Last Christmas older son chose the week after Christmas to arrive. It was great, we had two Christmases.
