An ice cream cake would be great for DH birthday. The Mexican ice box cake sounds good but where to find ladyfingers? Dulce de Leche ice cream on brownies sound wonderful but where to get the flavored ice cream?

Can you tell I've never made one?

 
The Mexican chocolate icebox cake is fantastic.You can use sponge cake layers instead of ladyfingers

I used to make it with storebought ladyfingers, but the past few times I made it with homemade sponge cake. If you don't want to bake, maybe you can find storebought sponge cake OR maybe you can use something else to line the pan. I think one reviewer used vanilla wafers.

 
Here's another idea - Strawberry Cream Pie - I double it, and make it more of a cake size in a

springform pan. Delicious.
I've also made this with frozen raspberries, thawed and drained - just as delicious.

STRAWBERRY CREAM PIE

INGREDIENTS:

8 oz. pkg. cream cheese; softened
1/4 cup sugar
1/2 teaspoon vanilla
dash nutmeg
1 cup (+ additional for garnish) strawberries; sliced
1 cup heavy whipping cream
1/4 cup sifted powdered sugar
9-inch graham cracker crust

DIRECTIONS:

Combine cream cheese, sugar, vanilla and nutmeg until well blended. Mash 1 cup strawberry slices, stir into cream cheese mixture. Whip cream with powdered sugar until stiff peaks form; fold into cream cheese mixture; spoon into crust. Chill several hours or overnight.

Before serving, garnish with sliced strawberries in an overlapping circle on pie.

Optional: Serve with whipped cream and a mint leaf on the side.

 
The Dulce de Leche ice cream on brownies is my go to "nice" easy to make ahead dessert...

1) Use a different brownie recipe, the one written is dry which makes it very hard to cut the cake. I sub the Supernatural brownie recipe now, but any favorite that's made for an 8x8 pan should do it.

2) Hagen Daz makes the Dulce de Leche ice cream, in fact I just bought some 2 days ago. Just grab a pint at most grocery stores.

The Dulce de Leche ice cream cake is very good, it's really easy, mostly it just takes time to freeze between layers, and it makes a nice presentation. I've used it for birthdays before and it's a crowd pleaser. I would've added it to Richard's thread above, but it's not officially a cake.

I say go for it!!!

Lady fingers are available at any good supermarket in their bakery section. Ask for them because

they are usually kept frozen.

 
I can vouch 4 this 1! A couple yrs ago I doubled & put in a springform pan as Meryl suggests. It

disappeared in a flash. Very yummy!

 
Did ask at the bakery and got 'em. Cake just went into the fridge.

But the whipped stuff didn't quite make enough to come to the stop of the ladyfingers. So I put plenty of choc curls on top. (BTW, no Kahlua here so brushed the outer ring with amaretto. Can't hurt, right?)

How long can you keep this in the freezer, especially with the whipped cream on top?

 
Everyone liked and appreciated the lightness of the Mexican ice box cake

Next time I will make a bit extra of the filling as it was just a bit short of the top f the ladyfingers. Also have to remember to keep leftovers wrapped as the ladyfingers dried out overnight. Won't stop us from eating them later today though!
