Belated THANKS to Dawn-MO, Joe and Pat-NoCal, et al for carrots recipes

I'm sorry this is so overdue. A very good friend got ill and passed on. I'm only now visiting here regularly.

BUT --MANY THANKS FOR THE SCRUMPTIOUS RECIPES OFFERED LAST MONTH. So many of you offered great suggestions which I am hanging onto for future use. I did try the following:

Pat-NoCal's 30-year-old recipe for carrot cake. It was easy and good. Next, I'll try the other one you posted.

Joe's Carrot Pudding - amazingly tasty for such easy prep. Not only the pudding is good, but I made extra shredded carrots to eat without making it into pudding. That was good even by itself.

Dawn-MO, I cannot believe how much we loved the Thai Carrot soup. We ate it and returned for more, ate it again the next lunch and night. As I write this, it's raining and I want to make it again. I cut the coconut milk in half and used the low-fat version, and it was still that yummy. Thank you!

Isn't that a great recipe! You can also substitute pumpkin for the carrots...

I have done that and it was equally good. I am sorry for you loss of your friend. You are in my thoughts.
