BUT --MANY THANKS FOR THE SCRUMPTIOUS RECIPES OFFERED LAST MONTH. So many of you offered great suggestions which I am hanging onto for future use. I did try the following:
Pat-NoCal's 30-year-old recipe for carrot cake. It was easy and good. Next, I'll try the other one you posted.
Joe's Carrot Pudding - amazingly tasty for such easy prep. Not only the pudding is good, but I made extra shredded carrots to eat without making it into pudding. That was good even by itself.
Dawn-MO, I cannot believe how much we loved the Thai Carrot soup. We ate it and returned for more, ate it again the next lunch and night. As I write this, it's raining and I want to make it again. I cut the coconut milk in half and used the low-fat version, and it was still that yummy. Thank you!
