Berry Bavarian Crown

1 sm. pkg. strawberry gelatin1 cup hot water

1/2 cup ice cold water

2 sm. pkg. frozen strawberries ==OR==

2 1/2 cups fresh sliced sweetened berries

2 cups whipping cream, whipped

1 angel food cake (10")

Ruby Glaze (recipe follows)

Dissolve gelatin in hot water.Add ice water and chill until slightly set. Beat gelatin with electric mixer until light and fluffy. Drain berries; reserve juice for glaze. Fold berries and whipped cream into gelatin mixture.

Rub off all brown from the cake. Using a fork, tear cake into pieces. Alternate cake pieces and gelatin mixture in a 10" tube pan. Chill at least 10 hr.

Unmold on serving plate and drizzle with Ruby Glaze. Chill before serving.

Serves 12-16.

Ruby Glaze:

1 c. strawberry juice

1 T. cornstarch

2-3 drops red food coloring

1 tsp. soft butter

Blend cornstarch with juice gradually. Cook until clear over low heat, 3-5 minutes. Remove from heat and add butter and food coloring. Cool.

Drizzle over cake and chill cake well.

6 Ounces Strawberry Jello
2 Cups Boiling Water
1 Cup Sour Cream
1 Pint Strawberry Ice Cream
1 Tablespoon Lemon Juice
2 10 Oz Pkgs Raspberries, Frozen -- WHOLE BERRIES/SYRUP
10 Ounces Strawberries - Frozen -- HALVES IN SYRUP
WHIPPED CREAM
2 Cups Whipping Cream
1 1/2 Teaspoons Vanilla
1/2 Cup Confectioners Sugar

PLACE JELLO IN LARGE BOWL. ADD BOILING WATER AND STIR TO DISSOLVE.

ADD SOUR CREAM AND BEAT WITH WIRE Whisk OR EGG BEATER UNTIL SMOOTH.

CUT THE FROZEN ICE CREAM INTO THE GELATIN MIXTURE, CUTTING IT INTO ABOUT 10 PIECES. STIR UNTIL MELTED AND SMOOTH.

ADD LEMON JUICE AND FROZEN Fruit. USE A FORK TO BREAK UP THE FROZEN FRUIT A BIT, THEN USE YOUR BARE HANDS UNTIL THERE ARE NO PIECES LARGER THAN A SINGLE PIECE OF FRUIT. IT FEELS COLD, BUT IT DOES THE BEST JOB. (ADDING THE FRUIT WHILE IT IS FROZEN HELPS TO SET THE GELATIN MIXTURE, SO THAT BY THE TIME THE FRUIT IS BROKEN UP AND
SEPARATED, THE BAVARIAN IS FIRM ENOUGH TO KEEP THE FRUIT FROM SINKING.)

QUICKLY POUR MIXTURE INTO A PITCHER AND POUR INTO 8 LARGE GLASSES, EACH WITH ABOUT A 9 OUNCE CAPACITY.(SEE NOTE 1) LEAVE A GENEROUS AMOUNT OF
HEADROOM ON EACH. REFRIGERATE.

DO NOT FREEZE. THIS WILL BE READY TO SERVE
IN AN HOUR OR TWO, OR IT MAY STAND OVERNIGHT. TOP WITH THE WHIPPED CREAM, MADE AS FOLLOWS:

IN A CHILLED BOWL WITH CHILLED BEATERS, WHIP THE CREAM, VANILLA AND CONFECTIONERS SUGAR UNTIL CREAM HOLDS A SHAPE. PLACE A LARGE POONFUL ON EACH DESSERT. DECORATE, IF AND AS YOU WISH. CAN USE CHOPPED GREEN Pistachio NUTS, GLACED CHERRIES, AND/OR CHOCOLATE LEAVES OR SLABS.

NOTES:
1. CAN BE PREPARED IN A HEAVY, STEMMED BEER GLASS. THIS MUST BE PREPARED FOR INDIVIDUAL SERVINGS - IT IS TOO DELICATE TO SERVE FROM ONE LARGE BOWL.

2. ABOUT 1/2 TEASPOON EACH OF STRAWBERRY AND RASPBERRY FLAVORINGS, ADDED WITH THE LEMON JUICE, EMPHASIZES THE FLAVOR AND IS A WELCOME ADDITION.

3. IF BOTH FROZEN RASPBERRIES OR FROZEN STRAWBERRIES ARE NOT AVAILABLE, USE THREE PACKAGES OF WHICHEVER ONE YOU CAN GET.

 
A great summer recipe! We made a similar thing with lemon jello, no berries.

combined it with whipped cream and the cake cubes and poured into a 9X13 pan. Chilled then cut in squares. So refreshing and easy.
