I made this last night and found it delicious. Adjustments I made were using Tony Chachere's Creole seasoning instead of a Cajun seasoning and increasing the amount a bit. I also used Carr Valley Apple Smoked Garlic Cheddar and Yancy's Fancy Hatch Chile cheese rather than Monterey Jack and another smoked cheddar. I will make this again.
