RECIPE: Big hit at the bake sale - these sold like, well, hotcakes - teehee. Rec: Coffee Cake Muffins

1 cup flour

1 3/4 tsp baking powder

pinch salt

1/2 stick butter, melted

1 large egg, room temp

1/2 cup sugar

1/4 cup sour cream

1/2 cup milk

3/4 stick butter, melted

1/4 cup dark brown sugar

1/4 cup white sugar

3/4 teaspoon cinnamon

1 cup plus 1 tablespoon flour

optional: chopped pecans

Preheat oven to 350F. Whisk together the flour, baking powder, and salt; set aside.

Whisk together butter, egg, sugar, sour cream, and milk in a large bowl; blend in flour mixture until just combined (will be lumpy). Line muffin tins with papers and pour 2/3 full.

For the topping, whisk together the remaining butter, sugars, and cinnamon until smooth. Add flour and blend with a pasty cutter to form large crumbs about the size of a pea, adding more flour as needed to get a crumbly texture. Sprinkle on top of muffins. Top with a teaspoon of pecans if desired, and press lightly so that the streusel sinks into the batter a little.

Bake on middle rack of oven at 350F for 18-22 minutes (depending on your oven), or until a toothpick inserted in center comes out clean, taking care not to overbake. Best served warm!

Makes about 12 muffins or 24 mini-muffins.

 
They were gone before I got there, but they said they went as soon as they

put them out. Probably 25 cents each, maaaaybe 35?

GROSSES me out.... and I'm an animal lover. Yuck!

 
Made these today....meh. The "cake" was good but needed some spice. Showy but not my favorite rec.
