Our kids gave us a bag of Marsh Hen Mill blue corn stone ground grits for Christmas. These were formerly called Geechie Boy grits--from Edisto Island just south of Charleston.
Stone ground grits usually take a long time to cook so I put them on early--we were at the beach last week and were having shrimp and grits as our final dinner. So I started them and started tasting them about 10 minutes later. They were DONE!! And they were a dramatic purple blue color--and more the consistency of porridge. AND delicious. Such a surprise. We added parmesan (instead of cheddar) for the dinner.
