Blueberry Mango Pie, Oh My (opia)

Can't honestly write the recipe succinctly because I was just tossing stuff in. It was 2 cups of frozen/thawed/refrozen/thawed/refrozen/and thawed yet again bitter blueberries carried up from Florida, plus 1 cup of leftover blueberry pancake sauce made from fresh blueberries + 1.5 cups of golden mangos + 1/2 cup of sugar + 1/4 C of Instant tapioca (too much I think) + a tsp of butter on top.

Crust was that Crisco version from the rhubarb pie recipe + TLB of butter that I'd re-made two weeks ago. I'd planned to try another rhubarb pie, then forgot about that, then lost the dough and then found the dough again! By now the dough had started to darken so I didn't care that the blueberries weren't perfect. There wasn't quite enough to build up a rim or weave unbroken lattices, but it worked. I brushed the rolled second crust with heavy cream and dusted it with demerara sugar before cutting the lattice strips. Baked 400 for 20 minutes, then 350 for 30 minutes.

Baked it on a sheet pan, so--of course--this time there was absolutely no overflow.

Very tasty, if a bit too thick. I'd use 3 TBL of tapioca next time for 4 cups of fruit.

My friend sent me the tea towel and pie server so I wanted to thank her. I followed the instructions on the server handle and had a slice of pie for breakfast because who doesn't need anti-oxidants, eh!

The pie looks perfect! I need to bake something that is not a cake, cookie, or cupcake. Pie will be next, then bread. smileys/bigsmile.gif
