Book club reading Americanah - snacks for morning meeting the day after Labor Day

Nigerian and/or American

But I have to hold down the spice level for the older ladies in the group. smileys/frown.gif

They might be hot-dogged out after Labor Day, lol. Take a look at this

Nigerian website, Anna, to see if anything speaks to you. Many of the recipes sound intriguing but the Banana Cake sounds especially nice for the time of day you'll be getting together. Or Plantains and Eggs?

But hot dog rolls would work as well if you want to go that route. Or apple pie?

Well, I love to look and see what a cuisine offers, and Nigerian looks a little

daunting for obtaining the authentic ingredients (jute weed, etc.). Here is an eggplant dip that could be interesting. And on another site I saw bean cakes that are fried and as described, eaten through the day. They say a particular bean but blackeye peas are mentioned elsewhere. could be very interesting--and for those that really like more heat/spice, serve some sriacha or green jalapeno alongside (not authentic, but good).

Thanks for links, Charley and Pat

It sounds like a diverse cuisine with similarities to other African nations and even British food. I have to finish the book and then will decide on snacks, but will not fry in the heat we've been having here! (Personally, I love Samosas and may pick up some locally.)

Anna, I see folded crepes as a common Nigerian food. That would be easy to prepare ahead of time

and then let the guest fill with their own choice:

custard
jam
lemon curd
savory
some sugar-free option
fresh berries

Got shot down. Boring, same old thing

I have to "share" food duty with an older and longer time in the book group. No imagination but I don't want to cross her. Iced tea and coffee, fruit platter, cheese, cookies. At least, I will find a decent cookie recipe, maybe switch banana cake to banana cookies or tiny cakes... What goes with cheese???

how about olive oil fried almonds, homemade crackers (especially like manchengo and crisp rice)

I deal with that in my DAR group - old and stodgy ideas. None of that "newfangled" stuff smileys/smile.gif
