Borrowed a friend's waffle maker. Anyone have a great waffle recipe?

What fun! I do not have a recipe, but would suggest if you are borrowing it to try using it for

sandwiches. I recall you are often cooking with a lil chef.

It is such fun, and an unexpected surprise to find a "waffle" of grilled cheese, or bacon, cheese, etc... Just unexpected. and a fun way of using a waffle maker!! Makes you smile!

I saw on a Diners, Drive-Ins and Dives, a place where they made a turkey dinner waffle.

They used turkey stuffing and made a waffle out of it, then topped it with turkey, mashed potatoes and gravy. Yum! I have wanted to make this for awhile.

Do you have access to sourdough starter? Those are light and crispy.

I can give you a recipe if you like. Start the sponge the night before and finish up the rest of the ingredients the next day and Waffle-On !

Also, we've been enjoying these waffles from Bobby Flay.Cheddar, Bacon Cornmeal

Waffle Sandwiches. The Maple Mustard and cheese just make them so good.

Cheddar and Bacon Cornmeal Waffle Sandwiches with Maple Mustard
Bobby Flay

3 sandwiches.

1 cup white cornmeal
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 cups buttermilk
5 tablespoons unsalted butter, melted
1/4 cup plus 2 tablespoons pure maple syrup
2 large eggs
Nonstick cooking spray
2 tablespoons Dijon mustard
1 1/4 cup grated sharp Cheddar
6 slices bacon, cooked until crisp

Preheat the oven to 300 degrees F.

Whisk together the cornmeal, flour, baking powder and baking soda in a medium bowl. Whisk together the buttermilk, butter, 1/4 cup of the maple syrup and eggs in a medium bowl until combined. Add the wet ingredients to the dry ingredients, and stir until just combined.
Heat a waffle iron according to the manufacturer's directions. Spray the grates of the waffle iron with nonstick cooking spray. Use a scant 1/2 cup of the batter per grid, close the cover and cook until golden brown or when the steam stops emerging from the waffle iron, about 4 minutes. Repeat with remaining batter. The recipe will make 6 waffles.
Meanwhile, whisk together the Dijon mustard and the remaining 2 tablespoons of the maple syrup in a small bowl.
Place 3 waffles on a large baking sheet in a single layer and spread some of the mustard over the tops of each waffle. Sprinkle the cheese evenly over the top. Place in the oven until the cheese has melted.
Arrange one-third of the bacon slices on the cheesy waffles and drizzle with a little more of the Dijon mustard mixture. Top with the reserved 3 waffles. Slice on the diagonal and serve warm.

Do you want to know a secret?

I have never had a waffle...

I am a certified waffle virgin.... years pass, I keep telling myself I should at some point try one, but so far... nothing

I am new to chicken and waffles - someone made me taste them about a month ago

and I was so shocked that they were really good.

Mom's waffles or pancakes on Sunday mornings were a staple of my childhood.

That's funny. From time to time I journal, "I have never..." and make a list of all

the things I've never tried/made. It's a riff on a game we used to play as kids, but it gets the wheels spinning. I borrowed the waffle maker because I've never made them!

Funny. I was thinking about my "I have never..." list and "thought out loud" on Facebook. I have never gone crabbing or clamming (a shame since the great seafood is so close to me). I have never made an apple pie. I have never gone apple picking. You get the idea...

The surprise? Within minutes someone invited me to go crabbing when the season opens. Another person offered to teach me their special apple pie. Amazing.

THIS is the reason I borrowed the waffle maker. I wanted to make this recipe. Starting tonight. smileys/smile.gif

Butter and real maple syrup is a must for me. DDH liked fruit syrups, but I must have real maple.

I am a waffle purist.

I have this note in my files about it...

"Note: I read a lot of reports that this recipe would not work in a belgian waffle maker. To compensate for this, I tweaked the amount of baking soda (1/2 teaspoon) and it worked perfectly."

I don't know where I got that info, but FYI in case it's a belgian wa.ffle maker
