Bought a turkey day after Thanksgiving

It was a really good sale for a 11.81 pound Diestel turkey for $19.95. I did some major rearranging of my tiny apartment fridge to get it to fit and am hoping it thaws this month. Lol. My fridge tends to freeze anything on the top shelf and after playing turkey jenga the top shelf was the only place it would fit. It’s still sold as a rock today.

I plan, after consulting with friends (thank you), to spatchcock it and cut it into half. One half I will cut into quarters and wrap really well and freeze for an end of month dinner - maybe mole. The other half I will either roast on top of a roasting pan of my favorite stuffing, or I may experiment and try to make one of my favorite roast chicken recipes. I have already made a batch of my favorite Negroni cranberry sauce in anticipation. It will still be a lot of turkey leftover for just me but I am looking forward to that “day after” sandwich, turkey broth for ramen, and a tetrazzini or a biscuit topped pot pie.
