This was an advertising supplement in my new Bon Appetit for Florida's Natural orange juice. I didn't have any fruit so I just used the sauce straight up...really good. Next time I'll definitely add sliced bananas.
Orange Pancakes
Serves 6
2 cups biscuit mix
1 cup Florida's Natural Premium Brand Orange Juice
2 eggs
Sauce:
1/4 cup sugar
1 tbsp. cornstarch
1 1/4 cups Florida's Natural Orange Juice
2 tsp. butter or margarine
1 8-oz. can pineapple tidbits, drained
1 medium banana, sliced
In a medium bowl, stir together biscuit mix, orange juice, and eggs. Cook pancakes on hot, lightly greased griddle.
For sauce:
In a small saucepan, combine sugar and cornstarch. Stir in orange juice. Cook and stir over medium heat until thickened and bubbly. Cook and stir 2 minutes more. Remove from heat. Stir in margarine and pineapple. When sauce is warm, stir in banana and pour over pancakes
