Brookville Hotel Cole Slaw Dressing

Justifiably famous for their fried chicken,

the Brookville, Kansas Hotel serves a great

cole slaw which is a super side dish for BBQ ribs or chicken:

1 tsp salt

2/3 cup sugar

1/3 cup cider vinegar

1 cup whipping cream

Combine the above ingredients well. Pour

dressing over shredded cabbage and

refrigerate at least two hours.

Does it say how much cabbage to use?

Marilyn, it will work with a medium-size head of cabbage. So I would

say about 4 pounds; maybe 5 or 6 cups.

Great. I've been looking for years to duplicate a "NC version" a restaurant sold

down here. I knew it wasn't mayonnaise...and it's wasn't too tart, but it wasn't too sweet either...three big no's for me.

Theirs was just perfect. In fact, I used to buy a quart of it a time and just eat that for dinner....thinking, "Oh Fiber & Veggies for dinner."

Figures "my veggies" would be loaded with sugar and fat. No wonder I liked it so much.
