Brown Family Farm All Natural Buttermilk Pancake Mix

We received this pancake mix and a jug of maple syrup for Christmas, and this mix is delicious. I'll buy it again. You can order it on the internet too. I want to try to make the mix. The ingredients are: wheat flour, corn flour, rye flour, powdered buttermilk, and baking soda. You're supposed to mix it with water, and you can add eggs and oil. We use 1/2 milk, and 1/2 water, and 1 T oil per cup of mix. They rise high and light, and maybe it's the rye flour. It's just really delicious, and simple.

 
Kendall, I just used rye flour for my GBH (per the rules and recipe)

and one of the comments about using rye was that it did not have as much gluten as regular flour.

I'm betting it's the amount of baking soda they used. With the buttermilk to counteract it, you could add as much as 1 Tbl.
