I also managed to get a good large tomato. I sliced the tomato a couple of hours before dinner, marinated with kosher salt, pepper, red wine vinegar & a hefty drizzle of olive oil and some torn basil leaves so it got nice & soupy. I toasted some crusty bread . Pulled off pieces, dipped in the tomato marinade, put a piece of tomato on the bread then put spoonfuls of the burrata on top. Ate with olives & a nice glass of wine. Heaven. I have half of the first one left. I also picked one up for a friend because they said they had a few extra from the list where we all had to order ahead of time. Now I don't want to give the second one up! I guess I should be good & give it to her if I don't want to jinx my luck for the drawing for the 40 pound Italian chocolate easter egg.

So glad you liked it...it's on my menu for tonight...

home roasted red peppers, oven roasted tomatoes and procuitto. Main dish panko crusted chicken cutlets and broccoli rabe w/garlic...getting hungry thinking about it.
Keep in mind that Burrata is best eaten same day you cut into it.
