Cabbage Rolls - Church Bazaar Recipe)
3 maybe 4 cabbages frozen for about 1week and defrosted in sink for a day or two. Remove centre core. Cut leaves in half, remove hard centre vein or shave off. (We do about 25 cabbages and make up the following in batches until the cabbage is almost used up. Some left-over and odd leaves are saved to chop for layering with sauerkraut.
You also need canned tomato juice and canned sauerkraut that has been rinsed out a very little so that it's not too sauer.
In large container, place the following:
6 pounds ground meat (5 pounds pork, 1 pound beef or
your choice of blend)
3 Tablespoons salt
5 Tablespoons paprika
5 teaspoons black pepper
5 cups PARTIALLY COOKED rice (Cook 2 cups long grain rice in 3 cups water - rice should only be ½ way cooked – add rice with leftover water to meat mixture.
Saute in some oil until soft and add to the above:
5 large chopped onions - add
5 teaspoons chopped garlic and continue to saute a little
Check for salt, so that it isn't bland.
Roll up meat into the cabbage leaves into little bundles. We use an ice cream scoop (about a ¼ cup or so) for each roll. If an end isn't completely covered, it doesn't matter.
Cut up remaining pieces of cabbage and some onions and mix with slightly rinsed sauerkraut. Place a layer on bottom of a large roaster. Layer cabbage rolls neatly in rather tight rows. We get about 50 or so rolls layered in each roaster. Put some more chopped up stuff on top. Pour on one large can of tomato juice, plus about ½ can of water. Top should be covered in liquid. Cover with foil. Make sure you set roaster on cookie sheet in case some spills over. Each person takes a roaster home and bakes it - boxes it - and freezes it.
Bake in preheated 350 degree oven - 1 Hour
300 degree oven - 1 Hour
275 degree oven - 1 Hour
Taste one to see if cooked. Cool Completely.
Place 6 rolls in 5x7 foil container, some chopped up stuff and a little liquid, put on top and freeze.
Heating instructions: Remove from foil and microwave – or take off top and bake.
Some people dilute tomato soup and pour on top.
Elenor's Note: I would rather pack the rolls much looser and have more liquid in the roaster. But when you are doing that much, the gals really like to fill the roasters.
