Cajun Shrimp

1/2 cup vegetable oil (do not use all olive oil---it will coagulate in fridge)

2T (or more) hot sauce ( like Texas Pete)

1/2 tablespoon minced garlic

1 teaspoon salt

½ teaspoon Old Bay Seasoning

½ teaspoon dried basil

½ teaspoon dried oregano

½ teaspoon dried thyme

Or 2 tsp italian seasoning for basil/oreg/thyme

1T teaspoon fresh parsley

2T vinegar

2T ketchup

2 pounds frozen cooked peeled shrimp, thawed

Place first 11 ingredients in large ziplock bag and "knead" well to combine. Add thawed shrimp and gently "knead" some more to distribute marinade. Chill for at least 8 hours. Drain and serve in a lettuce lined bowl.
