I have made the mistake of melting butter and chocolate together, adding the eggs and flour but then BEATING the darn stuff too long.

The ABSOLUTELY WORST brownies I have ever had, bar none others. Tough, dry, nasty. My snack sucking, vacuuming family would not finish, once they tasted them.

Technique is quite all in brownie making.

 
I have done the "fast melt" one pot brownie thing. . .

the author claims that Nick Malgieri developed. Only difference between his melting procedure is that I melt my butter and the chocolate (withe the chocolate starting on top of the solid butter) on low heat, while keeping an eye on it and he melts his butter over high heat and then throws in the chopped chocolate.

I like my way better 'cuz it is less effort: I don't have to chop the chocolate!

I have been making the one bowl brownie recipe from the back of. . .

a baking chocolate box for years.

I don't mind dirtying pots and pans and dishes while cooking, but when I find a way to NOT dirty as many, I stick to it. I won a contest with a recipe based on one bowl brownies.

Very good tips in this article though, especially the ones about letting the batter rest and "cold shocking" the hot brownies.

The batter resting thing I swear (now that I am reminded) I discovered a while back, but could never remember, plus brownies with me are a type of almost instant gratification think.

The cold shock though, what a great idea--cools the things off fast so all that moisture does not evaporate and continue to cook away as they are cooling off out of the oven. Gotta try that.
