Italian Cookies
1 1/2 lbs. (4 1/2 cups) white flour
3 heaping teaspoons baking powder
6 whole eggs
1 orange
12 Tablespoons sugar
1 1/2 sticks (12 Tbsp.) butter
2 Tablespoons vegetable oil
Pinch of salt
3/4 cup chopped walnuts
3/4 cup white or black raisins
Preheat oven to 325. Put flour in large mixing bowl. Add the sugar, butter, oil, salt and eggs and all of the orange (juice, pulp and grated peel.
Sprinkle baking powder, nuts and raisins over mixture.
By hand, mix all ingredients together, gradually blending all ingredients into the flour until combined.
Rub a generous amount of oil on your hands and gently knead the dough.
Cover the dough and let stand for 30 minutes.
Shape and twist a small amount of dough (1 at a time) into a rope and twist into a knot.
Bake cookies on greased baking sheet at 325 until they are light tan color. Do not let them brown.
While cooling prepare Vanilla Glaze.Spread on cookie and set aside to dry.
Vanilla Glaze
Combine 1 cup confectioners sugar
1 tablespoon milk
1 teaspoon vanilla
Beat until smooth
