Can anyone smell Judy in Mass's Pear and Walnut cake in the oven? What a crop this year!!

Well, not that the cakes grew on the tree, but I'm on cake number 2 and the pears have been outstanding. the entire neighbourhood is loving them.

But also have perfected the recipe for Pear Tequila.

We had a lousy Summer but lots of rain in the Spring and early Summer and the fruits are the result.

 
I sub spiced dark rum for the water and I bake it for 50 min in a bundt pan. I also find that

it improves with 1 - 2 weeks in the frig. Judy on the other hand, finds that her family cannot wait that long.

Oh yes, I also make that a VERY generous 1/2 t. of nutmeg.

 
I just baked this last night, and right now it is gone! . . .

we ate some last night, I took 8 slices to work and they dissappeared, I had a slice for breakfast with some scrambled eggs (not cooked together!) and my husband just finished off the last of it.

I put 6 pears in it instead of 5 and it was just wonderful. I also baked it in a bundt pan, but my baking time ran about 1hr and 10 mins. May be that was because of the extra pear? Any way, even with the extra fruit, it baked up beautifully!

I think this would be a great batter for apples, or just about any firm-ripe fruit.

I made it with some wonderful pears that I got up at a local apple growing area (Oak Glen, outside of Yucaipa, Calif).

 
It's on my list for this week---buying pears today. It's for a church breakfast, rum or no rum, hmm

 
I am going to make this for Friday morning coffee with the in-laws.

Could you put the streusel topping that cheezz posted for the zucchini bread in the bundt pan and then the cake batter? Would the streusel just burn or would it make a nice topping for this cake? Any ideas? Thanks!

 
Don't think it needs any special topping. Won't SOMEone TRY putting it away for 2 weeks!!?

I make 2 at a time so that it's not a temptation problem.

I too, use extra pear, and I chop it into larger pieces than indicated.

 
Ok, I'll try. I want to make it for a dinner next Friday night.

So I'll make it this Friday and put in the fridge. (I'll need a back up dessert, just in case!)

 
meant to say I made blackberry jam also not for a topping.

When I have the energy, I cook alot. Made Ina"s Cranberry Orange scones yesterday BF loved them so did the neighbor's. Well back down to rest. Love to all
