just wanted to say that there have been so many incredible recipes this last few weeks I don't know where to start.

And maybe search for SOUP, REFRIGERAT with the comma in there

As in refrigerate leftovers, chill in refrigerator, etc.

Love this Cucumber Cooler

Peel cucumber and scoop out seeds & cut in a few large chunks. Put in blender and add buttermilk just to level of cucumbers. Put in the tops to a small scallion torn in pieces. Squeeze in half lemon. Add a few shakes of worcestershire, seasoned salt, pepper and about 1/2 to 1 tsp dried dillweed. Blend until smooth. Serve icy cold in a tall glass. Heavenly in hot weather.

Cold Corn Soup....We just had this today; I've made it in previous years.

An easy way to make creamed corn soup in just minutes!

Blender Cold Creamed Corn Soup

Prep and Cook Time: 5 minutes

Ingredients:

1 cup low-fat milk (I use Whole Milk)
1 + 1 cups corn kernels (fresh or frozen)
1 TBS honey
Sea salt and pepper to taste
Directions:

Combine 1 cup of Milk, 1 cup of corn and 1 TBS honey in blender. Add sea salt and pepper to taste. Blend on medium speed for 1 minute. (I don't add salt and peper, but I do add cayenne pepper.

In a mixing bowl, combine remaining cup of corn kernels with the corn purée.

On stove, heat on medium for 5 minutes, if you wish.

Garnish with minced parsely or toasted sunflower seeds. Serve with chicken or any type of seafood (such as shrimp, scallops or fish).
...

Serves 2

I save a little corn to throw in on low at the last, so we can have some texture to bite into.

This is very good and it's made fast, nice and cool for the hot summer.
