Can anyone tell me the difference between a marseilles pan and a madeleine pan?

It's just the shape. Madeleines are traditionally shell-shaped

Madeleine pans are shallow and are made with a batter. Some of the other
cookie molds use more a shortbread type cookie.

Cheezz, the classic madeleine recipe uses a stiff batter that is put in the mold in lumps
The batter spreads to fill the mold, leaving a hump in the center to represent the scallop in the shell.
Here is Julia's recipe, but there is no reason you couldn't use the molds for all sorts of other receipes
