I have a 4 pound butt that fits in a casserole dish in this oven. I hate to heat my big oven all day in our current NC climate. Will it be OK in the small oven? Do I cover it loosly with foil?
I would advise covering loosely for the first couple of hours. You are cooking very low and slow, so it should be fine. Keep an eye on it though; sometimes those small ovens can overheat at bake.
I would do it overnight in the big oven, personally. There is probably
nothing wrong with the toaster oven--just seems a long time for it to be heating. It might take a bit longer? Because of not maintaining the heat throughout? I would not cover--get the crust from the long time.
Internal temp should be about 190*.
