Can I freeze fresh rhubarb?

Sure. I do it all the time. I just slice it and put it on a tray to freeze the slices individually then pop it in a freezer bag or if you have a Foodsaver I would zap it with the Foodsaver.

 
I freeze it every year too. just chop, put in a freezer bag and in the freezer. it will soften

when thawed, but you will be cooking or baking with it so it should be fine. you may need to pat it dry if it thaws and is quite wet, if using in a cake. I put mine in quart size bags. usually enough for one recipe if baking or adding to pies.
