Can I freeze pineapple chunks?

All:

I am making a punch for an Easter egg hunt tomorrow -- pineapple juice based. I wanted to freeze pineapple chunks instead of using ice. Has anyone done this? Do the pineapple chunks just look nasty frozen? If you all think this is a good idea, how do I go about freezing? I was thinking of putting them in a single layer in a freezer bag.

Yup, the chunks get nasty. Because they are so small, it might not be a great idea to have them floating around in the punch loose (hard to serve around) so how about freezing them in a container filled with water or juice? Toss some sprigs of mint in too if appropriate- then you have a bigger chunk of ice with chunks in it- easier to work with.

 
I made Rosie Beranbaum's "fresh pineapple" and it froze beautifully, but that wasn't in

large chunks...and it had a lot of sugar added. So that may have helped the freezing process.

Boy, was it good. Worked beautifully in carrot cake.
