Can I freeze roasted beets? I made waaaayyyy too many for salad last night. I will never get them

I've never frozen beets, but could you make pickled beets with them? They're delicious, will keep.

I *wish* I had that problem! Freeze them? Sure, why not? You could also make borcht.

Thanks ladies and charley, I am going to lay wedges on a sheet pan, freeze then pack in ziplocks.
