eating dinner at 2PM and then I make him some kind of a nibble. Tonight it is mini loaf Rubens. Mini rye, slivered deli ham (ok, I don't have any corned beef), swiss cheese, sauerkraut and my version of thousand Island. So I have a can of sauerkraut and will be using a little bit of it. I try to make something different everyday so don't know when I'll get around to it again and wondered if I could package in small amounts and freeze? And while we're at it...any ideas for great munchies so he doesn't feel deprived?

How about Belgian Endive leaves spread with Boursin cheese?

You could make Pita Crisps- they are really crunchy and make you feel like you are eating something substantial- and maybe serve with some light tuna salad or a spread.

PITA CRISPS
These keep well in a covered container. Good for dipping, with soups or salads or for just plain munching.

1 large pita “loaf” per 2 people
3 T melted olive oil, with
3 minced cloves of garlic mixed in
parmesan cheese

Cut pita into 6 or 8 equal triangles. Pull the 2 sides of each piece apart, so that now you have 12 or 16 pieces. Place, rough side up, on a cookie sheet. Spoon the garlic oil on them, sprinkle with pepper and then parmesan, and run under the broiler until brown.
