Can I get away with not using the yuzu kosho in this recipe?

I would skip making the cookie if you don't want to use that ingredient.

The description of it sounds like a very bold flavor so the cookie wouldn't be the same at all without it. I would say pick another cookie.

Agreed. I have easy access to most Asian ingredients and it would be a hunt for me to find it. Also

hazelnut flour. Another head scratcher.

Thanks for the insight and good advice. I'll keep looking. Traca, mesquite sounds like

it might be smokey or woodsy and I'm not fond of either of those. Although I do love the scent of pinon and mesquite fires in ABQ in the fall. Just not to eat.

Look here for description of green and red Yuzu Koshos (more)

It looks to be a spicy, salty, sour condiment containing salt, chiles and rind of Yuzu citrus fruit:

Red Yuzu Kosho: http://www.earthy.com/Red-Yuzu-Kosho-from-Earthy-Delights.aspx

Green Yuzu Kosho: http://www.earthy.com/Green-Yuzu-Kosho-from-Earthy-Delights.aspx

Sounds interesting; maybe some sriracha and citrus peel of some sort (grapefruit? lemon? lime?--or a mixture of all three) could be used?

Sounds like someone had some Yuzy Kosho in the fridge and decided that the pineapple linzer cookies needed some zing?

If it is small group participating in the sharing event, perhaps you can put 1/4 cup portions in the

small take out containers from Chinese food that they can use to replicate the recipe at their home? The recipe sounds interesting. But if I were participating, I would be hesitant to purchase something for $25.00, not know if I would be able to make the same cookie, (Or that my family would enjoy).

Obviously, this idea would only work if you had a small group.....
