Can I make a pasta carbonara in advance? My dh is teaching

i would think so...

cool it quickly - maybe in a bowl in a sink of cold water.

then nuke it hot when needed.

 
It could bet a little gummy. If it were me, I would have everything ready >>

the water boiling, the cream and egg mixed, the bacon cooked, the cheese grated, etc. You could throw the pasta in the water as soon as he gets home and reheat the bacon while it's cooking. It could be ready in 10 minutes.

 
DH came home early

so dinner was nice. Of course I tweaked the rec and added SD tomatoes. Served just steamed broc on the side. Quite fatty and caloric for a "light" dinner!
