Can I replace Lobster meat with Crab?

I am wondering if I can replace the Lobster (which I have been unable to find in the stores for years)in this recipe with Crab Meat? Also would the amount of White Sauce be sufficient for 1 pound of Crab? It seems to me that the Lobster came in smaller than 1 pound cans. Also does anyone have any other suggestions for crab appetizers? Thanks

Lobster Canapes

Amount Measure Ingredient -- Preparation Method

1 Can Lobster Meat -- FLAKED

3 Tablespoons Butter

4 Tablespoons Flour

1 Cup Milk -- HOT

1/2 Teaspoon Salt

1/8 Teaspoon Pepper

Garlic

Worcestershire Sauce

Red Pepper

Parmesan Cheese

Paprika

24 Slices White Bread

CUT UP 24 SLICES OF BREAD INTO SERVING PIECES (CUT WITH JUICE GLASS) - TOAST ON ONE SIDE

MAKE THICK WHITE SAUCE

ADD ONE CAN LOBSTER TO WHICH SEASONINGS HAVE BEEN ADDED

PILE ON BREAD

TOP WITH GRATED PARMESAN CHEESE AND PAPRIKA

BROWN IN HOT OVEN/BROILER - WATCH CAREFULLY

 
I'd sure say so, yes. And how about crab meat cooked with bourbon & cream served in puff pastry?

This was invented in Pittsburgh at the Duquesne Club (now gone, also...)

Crabmeat Hoezel

1 can fresh crabmeat (1 lb.)
2/3 c. olive oil
1/3 c. tarragon vinegar
salt and freshly ground pepper

Place crabmeat on a bed of butter (Bibb) lettuce on a plate. Combine remaining ingredients and pour over the crabmeat. Serves 4.

Oh - can serve with crackers, but small baugette rounds are delicious also...
