Trader Joe's to the rescue >>
assuming you live near one. We always have their frozen "seafood mix" on hand, with scallops, shrimp and squid that can go frozen into a hot pan with some garlic and parsley, maybe some tomato sauce or whatever else is in the refrigerator. Meanwhile, boil up some of their parpadelle noodles and open a bag of thier salad. They also carry (at least in California) fresh salmon steaks stuffed with dilled couscous, 2 to a pack, that cook up in a few minutes. But my latest favorite is a "Taste of Alsace" frozen tart with caramelized onions, ham and creme fraiche that can go frozen right onto the oven rack. It's in the frozen appetizer section or with the frozen pizzas (also very good), in a green box.
No, I don't work for Trader Joe's, but I know my way around the store better than many people who do.

I love Trader Joe's frozen chicken breasts, and their frozen fish>>>
are great too - with my new microwave, it really defrosts perfectly with no advance notice!
for the chicken, I have 2 favorites:
Chicken Tarragon:
2 chicken breasts, thawed
1-2 TBL butter
1/2 white wine
1 tsp fresh or 1/2 tsp dried tarragon
soak tarragon in the wine while defrosting the chicken, or for 15 minutes. Saute chicken in butter, turning, until cooked through ~ 5 min per side (if you are using a whole cut up chicken, it's 30 -45 minutes, covered, turning once). Remove chicken to a warm plate, add wine and tarragon to the pan, boil over high heat until reduced. Return chicken to the pan, coat in the sauce.
serve with rice or pasta, or my latest favorite, polenta (which cooks in 5 minutes!).
My other chicken favorite is a little similar, saute the chicken in oil or butter, toss in a little raspberry sauce (from Penzy's I think). so yummy - I like this one with peas or asparagus if they are around.
For the fish, I like TJ's tilapia fillets, steamed in my bamboo steamer with a little sliced onion, sesame oil, and whatever veggies I have (carrot, celery are always around) - nice with plain jasmine rice.
much better than ordering a pizza or Thai!

Tracy, If there is a Trader Joe's near you they have a bag of frozen chestnuts....
that I tried last weekend for the first time. It was snowing hard and I did not want to go out but wanted to make red onion marmelade with chestnuts to go along with Richard in Cincy's German Pork Roast. So, I sent DH. He had no idea how much he paid and could not find the recipt. But they were very good. Don't be suprised when you first open the bag and they are still in the shell. They are pre-roasted and peel up in 2 seconds. They are also on the smallish side but worked perfectly in my marmalade!

They have some thin-crust pizzas from Italy and an Alsatian-style ham, cheese and onion tart
that I'm totally hooked on right now. They all go frozen right onto the oven rack. They have good frozen taquitos and gnocci with tomato sauce and mozz. They have lots of good fresh things too but I like to have the frozen stuff on hand for emergencies.
joe
Haven't tried the tart...will look for it. The pizzas are good as are...
some of the mexican things and the gyoza are pretty good in an emergency too. I like the fresh curries if I'm in a hurry, but I do like to have some things in the fridge...sometimes emergency = oh blaah, I don't want to cook tonight!

It's in a green box. (NT) - Joe - 9:37pm on 02/24/06
I just saw some recommendations for wines at Trader Joes. Thought you might like to try them:
Gaetano D'Aquino Pinot Grigio (white semi-sweet Italian wine)
I want to thank you for the tip about Geatano D'Aquino Pinot Grigio! I really like it and keep it on hand all the time...and at $4 a bottle it is really amazing! Thanks for mentioning it!
Another fave from TJ's
Have you guys tried the Portugese Espiral? That's become the house summer patio sipping wine here. Very light, tart, clean, and brisk with hints of citrus and a delicious light carbonization that gives a little fizz in the glass when you pour. Makes a great white sangria as well.
Another good find at $5.00 a bottle is Caves de Papes Cotes du Rhone. It's in a squat-shaped bottle. A really good red table and cooking wine.
Plus: I like the Lambrusco TJ's has been selling. Much better than Riunite.
And a recommendation for a vinegar from Trader Joe's:

If you like Indian flavors, try the Vegetable Masala patties - they taste like samosas
They are in the frozen section near veggie burgers at mine. They make a great sandwich on a ciabatta roll, or you can eat them as-is.
Also, the Mojito Salmon is excellent, also in the frozen section. It is a bit pricey (for Trader Joe's) $7+ for a two portion package. It is very delicious, and as soon as I figure out how to make the sauce, I'll do it myself. smileys/smile.gif
Check out the salads, especially the Pomegranate one - so good.
Whole Wheat Couscous, Arborio Rice, and Spelt with Peppers are all fantastic.
The "Just" juices are wonderful as well - I especially like the Just Cherry and Just Blueberry ones. They are nice mixed with the French Lemonade and a splash of vodka.
