Virtually no difference. Just different colors of corn.

The yellow might be a tad bit more flavorful. About the difference between yellow and white corn tortillas.

 
Pat, if you haven't already made this...and you have Mexican stores nearby, find

dried hominy and rehydrate that for this meal.

The difference is amazing. Even better would be frozen hominy, but I have absolutely no chance of getting that here in Florida. I carried home 4 packages of dried hominy from ABQ and the cashier at the grocery store asked me why I wasn't using frozen. "Cause I'm getting on a plane for a four-hour flight home, that's why."

I had only used canned hominy and thought that was what it was supposed to taste like. I liken it to the difference between canned tuna and fresh tuna.

The canned hominy is mushy while the rehydrated/cooked has some level of integrity left.

 
I remember Maria's posole in Santa Fe. What a treat. And how much posole we brought back. It is

still so difficult to find South-West foods in the east whereas from central Canada westward, where people visit Mexico and Arizona instead of the Caribbean and Florida, it's everyday.

Could I possibly even come close to Maria's posole?
