Can we talk about Ammonium Carbonate (Baker's Ammonia)? How do YOU add it?

I'd been looking through King Arthur cookie recipes and decide to order some. It just arrived and and chat there led me to egullet discussions on usage.

Good golly, there are definitely two camps on its disperment:

1. either dissolve in liquid and add

or

2. Sift into dry ingredients and add.

So...how do you use it and what is your favorite recipe?

By the way, here is the Vanilla Dream as posted in egullet: The dispersal method is completely different from the one posted on KA and the amount is different as well.

Vanilla Dream Cookies

1 cup unsalted butter, softened

1 1/4 cups sugar

1 teaspoon salt

2 teaspoons vanilla

2 cups flour

1/4 teaspoon baker’s ammonia

Preheat oven to 300 degrees F. Cream together butter, sugar, salt and vanilla. Beat in flour and baker’s ammonia. Batter will be dry and crumbly, but continue beating and it will come together. Shape into gumball size (3/4 oz) balls. Roll tops in coarse sugar. Press down with glass. Bake 20-25 minutes.

Makes about 32 cookies

I dissolve in liquid...

Usually the cookies I use Ammonium Carbonate in(Hirshhornsalz on the German packets if you find them) have some type of schnapps, rum, etc. and the instructions are always to dissolve in the alcohol.

Fresh doesn't dissolve very well and I always have a few little bits that do not completely dissolve into the alcohol.

However, it also doesn't store forever on a shelf like baking powder. I've had sealed packets that I brought back from Bavaria that sat on the shelf for a couple years be completely empty when I opened them with just a little brown stain on the foil liner from where the salts evaporated or otherwise chemically disposed of themselves.

She just mixed it with the dry ingredients. These are her instructions, but I believe she creamed the sugar and fats, then added the other ingredients.

Amount Measure Ingredient -- Preparation Method

1 cup shortening (1/2 Crisco, 1/2 margarine)
1/2 cup butter
2 cups sugar
2 teaspoons ammonium carbonate -- finely ground
2 cups flour
1 cup Angel Flake coconut (in cans) -- packed
powdered sugar

Make in balls. Space apart a good distance. Bake at 300 degrees for 20 minutes. Roll in powdered sugar when cookies have cooled. Makes 36 cookies.
