I am making some black bean soup now with a ham bone. I freeze the slices and the bones in zip loc bags with no harm done to the ham.

I do. Then I cut it up into small cubes for quiche, omlettes or split pea soup.

I think it depends on what you're using it for, though. I recently froze some

ham chunks and they turned very dark, almost purple. I haven't thawed them yet, but when I do, I think they are going straight to the food processor for ham salad. Maybe it has to do with the amount of water in it.

I do. I follow Jane's technique with small cubes in individual containers for rice, eggs, etc.

I also grind some- freeze in vac bags and use it for whatever.
