freeze them and they are fine for recipes where they are going to be cooked. I either dice them or cut in strips, spread on a sheet pan and freeze. Then I package them and they don't stick together and I can just take out what I need. Hubby's job requires travel and on short notice so I have become the queen of managing food stuff.
