Candied Bacon Ice Cream by David Lebovitz

For someone who is currently taking cholesterol medication, I should be banned from even finding recipes like this.

Loaded it into WW as six-1/2 C servings (recipe makes 3/4 quart) where it comes in at 11 points per serving. Even Haagen Daaz Peanut Butter Chocolate is less at 9 points for 1/2 C.

Maybe it's the inverse of the US$:Euro ratio...we get less money, but more calories?

(What can I say? I'm having a strange day here at work, initiating tests and then amusing myself online while they run in the background. Forgive me.)

What a curious flavor this must have....and cholesterol? - - >

Do your best to balance your saturated fats with naturals like peanut, olive and canola. You'll ultimately be forgiven. I found that watching out for "hydrogenated" oils made a HUGE difference. And of course...there's learning to love flax seed on everything! *grin*

I've just started the "flax seed thing", Glennis and just can't manage to get the

required amount each day. I have it on yogurt and cereal but to sprinkle it over dinner....yuck. The local Amish swear by it for arthritis. I have a friend who's using the pills which seems much easier. How do you get it all in each day?

I MADE this for our Swine Divine party a couple weeks ago....Mmm....

It was a huge hit among foodies. My co-workers on the other hand...That's another story entirely. LOL!

To guild the lilly, I served the bacon ice cream with a side of bacon toffee. And the host made candied bacon and mixed it in with a lovely tuille batter. The salty-sweet combo was surprisingly good.

Exactly! Baking the bacon with a sprinkle of brown sugar was a revelation...

It was salty-sweet just like bacon dredged in maple syrup.

In fact, next time I make the ice cream, my friend suggested making a maple ice cream and maybe infusing the base with a few slices of bacon. As it is, David's recipe uses candied bacon as a mix in and the whole bacon flavor profile isn't really that obvious.

It's really interesting people's reaction to this...

My initial reaction was, uh, no thanks. But then I thought about the suet in the christmas pudding, the beef in the mincepie, the sausage cakes with caramel icing, etc. So...why not?!

This is what I do. You get the whole batch in first thing in the morning

along with all sorts of vitamins and minerals from the fruits, joghurt, soy milk, etc.
