Candy-toffee, question and a cookie one?????

Am making the coffee toffee this afternoon, as I posted before, have not made candy in forever--can I cook a double batch and then pour onto two sheets to set?? do not see why not unless there is a candy thing I do not know??

Also am making the cranberry oatmeal cookies with white chocolate chips. I have cranberrys, but also have a fairly big bag of dried cherries. Does anyone think the cherries would make them too sweet. I think maybe, but I don't care for overly sweet things??

I made some cranberry, oats and white choc chip cookies a couple of weeks ago.

The cranberries were (unfortunately) sweetened. H didn't care for the sugar content of the whole thing. There seems to be a real dynamic between the sweet flavour of white choc and sweet of the cranberries.

(didn't stop him from eating them all in 2 days though)

So I'd say try the cherries. I doubt that they'd be sweeter than the cranberries I used.

 
DO NOT DOUBLE your candy recipe. I had always heard not to double. Last year

I did double my toffee recipe and it started sugaring on the sides of the pan (used bigger pan because of double recipe) and then "broke" and all the butter separated out. I had never had candy fail. Make two separate batches.

last year i doubled my candy recipe and...

broke both legs and an arm the following day.

i don't recommend trying.

 
Since just munching, they are sweeter than the cranberries, I'm thinking you are right. Maybe

at some point I will try them in a chocolate cookie?
I do a sort of one like the Jumble one Ang does.

I love the tartness of the cranberries and I think it helps cut the sweetness of the white chocolate
