"cassoulet-style". Very easy and far more delicious than it looks. I cooked half a lb of great Northern beans because I had them and used them all as well as quite a bit of the cooking liquid. I cooked them with salt, onion and garlic. The rest of the ingredients were halved, using about 1 lb of sausage. I'll definitely make it again.

Cassoulet-Style Italian Sausages & White Beans

Amount Measure Ingredient -- Preparation Method

2 1/2 lbs sweet Italian sausage links3 pints cherry tomatoes

1 medium-large onion, cut into 1 1/2-inch chunks

4 large cloves garlic, sliced

3 Tbs extra-virgin olive oil

1 1/2 Tbs balsamic vinegar

2 tsp dried thyme

3 bay leaves

salt and freshly ground black pepper

3 16-oz (about) canswhite beans, undrained

Buttered Breadcrumbs (optional)2 cups fresh breadcrumbs, made in the food-- processor from a good European-style loaf

2 Tbs (1/4 stick)melted butter

1. Adjust oven rack to lowest position and heat oven to 425 degrees.

2. Mix sausages, tomatoes, onion, garlic, olive oil, vinegar, thyme, bay

leaves, and a generous sprinkling of salt and pepper in a large heavy

roasting pan. Set pan in oven and roast until sausages are brown and

tomatoes have reduced to a thick sauce, about 45 minutes. Remove from oven,

stir in beans, and continue to cook until casserole has heated through,

about 10 minutes longer. Serve.

Buttered Breadcrumbs1. Heat a medium skillet over medium-low heat. Toss fresh breadcrumbs with

melted butter and a light sprinkling of salt. Add the crumbs to the skillet

and cook, stirring frequently, until golden brown, about 15 minutes.

Comments: If there's time, sprinkle buttered breadcrumbs over each plated

portion for a nice touch.

Stored in the refrigerator and warmed on the

stovetop or in the microwave, this dish means instant dinner later in the

week.

It sounds delicious, and it is truly in cassoulet-style. (not claiming to be a cassoulet.) My only

gripe might be the "optional" buttered crumbs. Crust on cassoulet is never ever optional.
