Cathy, I did the mashed cauliflower recipe tonight. Very, very tasty! I kept it simple...

...and steamed the florets for about 15 minutes before mashing with a little butter, grated romano cheese, pressed garlic and minced onion. A little S & P and I was good to go.

I can see why this recipe helped you keep on the diet. It tastes wonderful!

I'm now boiling a couple of cinnamon sticks to get the smell of cooked cauliflower out of the house, but that was expected.

We also jumped on this bandwagon last week. Two nights in a row. I love

that it stays hot the entire meal. That is one of the few issues I have with roasted cauliflower: it's cold by the end of the meal and doesn't reheat very well.

 
I, too, did the mashed cauliflower...my first time, loved it!

Steamed rather than boil, so it would not collect water. Roasted a head of cauliflower, squeezed it out into the food processor along with the cauliflower, added some heavy cream I had in the fridge from another recipe, salt, freshly ground white pepper, and snipped chives from my herb garden. It was so wonderful....

 
Oh, sorry for the typo...I roasted a head of garlic, then squeezed it out into the processor with

the steamed cauliflower.
