RECIPE:
The recipe shows the only substitutions Barb. And soaking in ice water crisps the cukes

I use Japanese cukes instead of "regular" cukes.

The Hondashi has an interesting flavor needed in this dish- the fish sauce is an okay substitute but the other is better. The MSG really does enhance the flavor. Since the world has found out MSG is not a bad thing, it is not a bad thing to add to this dish.
