We made a couple test cakes to sample it after dinner, and this is a seriously good cake. Definitely a keeper. Glad you tried it. I thought the same thing about frosting but stuck with the recipe topping

It is interesting- the topping is just mildly sweet but seems a perfect foil for the sweet cake. I like the lightness of the topping next to the density of that cake too. But it would be great with cream cheese frosting too.

Yes, the density and the mature depth of all the flavors...

the candied ginger really gives it a nice finish.
