CathyZ, how many cinnamon rolls would you say Grandmas Cinnamon Rolls make? And how big are they?

I am guessing about 2-1/2 dz good sized rolls, maybe 3 dz if they are a little smaller. . .

it all depends on how many you cut from the log.

 
I want to make them the night before and do a slow rise in the fridge...doesn't that work ok?

 
Cheezz, I let cinnamon rolls rise overnight in fridge

I get them out an hour or so before I bake them.

4 tablespoons sounds reasonable for 10 plus cups of flour. Huge recipe...

 
I make huge rolls (I posted a photo previously) but you can make them whatever size you want

The amount of yeast is correct. I post T&T recipes that have been made many times.

I generally make 16-18 rolls from this recipe- huge rolls which is the showstopper-feature of them. I have also made smaller size rolls and that would mean about 24+

As Melissa says, yes you can let them rise overnight in the fridge if you use "regular" yeast.
