CathyZ, I'm confused about the "green peppercorns" in your recipe above

2 T green peppercorns in water, drained and crushed

I have dried green peppercorns; so...obviously, not packed in water. And we're not talking capers, right? Are yours fresher? Classier looking? More willing to mingle with high-class entrees?

Have I always been on the wrong side of the Piperaceae condiment tracks? No wonder I didn't get into Harvard.

(well, that and the fact that I didn't apply.)

 
I'm wrong. I checked my supply of each and both are packed in a salt-water brine. But I believe

they are briefly dried before packing.

 
I use bottled green peppercorns in brine. And I bruise/open them in a mortar and pestle.
