However, as I've made fresh tuna exactly once in my life, I'm not sure what to serve with it (since the sauce is so rich).

Any recommendations would be greatly appreciated.

 
How about a simple Jasmine Rice cooked in chicken stock and a little butter

then toss in a few complimentary fresh herbs near the end. It is asparagus season, and it is so good right now. Maybe roast it with evoo, salt, pepper, and dried tarragon.

 
I usually serve a simple fettucini tossed with a little butter and with poppy seed, Marilyn or.....

I have also served with little roasted potatoes. I would also serve
baby carrots. One would be tempted to serve other stuff too but because there is a bed of spinach it is not needed.

I hope you enjoy it Marilyn- personally I could just drink the sauce....

wild caught salmon. Down here one of the super chains . . .

was selling wild "Copper River Salmon" for 25$ a pound (YIKES!). If I am paying Big Bucks for wild salmon, I need to know WHAT species I am getting--like king (chinook) or Coho or Sockeye.

I wish I could go out and catch my own.

--Just read more about Copper River Salmon, and it seems that no matter what the species caught, it is the care with how they are handled that makes the brand. Salmon are caught in nets that are frequently hauled in so the fish are alive. Then the fish are /killed/bled, then stored immediately in a water/ice slurry to chill. Makes you think about how all the other fishermen/fisheries are doing it. . .
