How should I do this? In the fridge? On the counter? Wrapped or unwrapped? How long will it need, do you think? Thanks!

 
I would do it in the fridge overnight, Andrea. Less moisture will come out of it.

I generally finish it off with a dusting of powdered sugar and if you do this, just pat the top with a paper towel prior to dusting- it should be fine.

Right now I have one in the fridge- dinner guests coming. I am making a raspberry coulis to serve with it and will add a dollop of whipped cream at the end.

Ah, since we are on the subject, I was wondering if anyone has made this without a paddle mixer

I have a load of gadgets, but have held off on the Kitchenaid. It sounds like the beating needs that type of mixer. (will I be evicted from the site by admitting to no Kitchenaid?? LOL!!
