Cauliflower Couscous

Sally, I love mashed cauliflower, probably better than mashed potatoes, however

I can't seem to get the texture right. It is too soft, if that is the right word. So I started adding potato to give it substance. How do I get it to the correct texture of real mashed potatoes?
