made potato fri sized pieces out of meat. I know that does not exactly make sense. But he described it as pushing boneless meat, and it appears in stick fry portions.

I gave him my mandoline to try, but it did not work for raw meat.

Any thoughts? Suggestions?

I admire his culinary interest, but can't seem to help him.

 
Just sounds lie a meat extruder? You would grind the meat first, then press thru an extruder?

 
tell him to try freezing meat until it is firm. . .

freeze the meat until it is firm and not droopy then run it through a french fry slicer or slice it into sticks; much easier.

 
I second getting the video but maybe he is seeing a jerky maker

I know they have these machines that make sort of slim jim type sticks of meat that you dry for jerky.

IF and that is a big IF - you were to partially freeze the right cut of meat you might be able to put it through a commercial french fry cutter and make 'fingers'.

I make steak fingers a good bit but I cut them by hand and it's not that big of a deal or that hard. You don't need unitaskers. In culinary school they teach you how to cut everything into all sorts of uniform shpes. It's really not that hard or time consuming.
