over the weekend. I marinated bone-in chicken breasts in the marinade, and grilled them on the bbq.

We loved them, and they just made the most fantastic chicken salad; chunked chicken, diced red onion, diced celery, chopped cilantro leaves and mayo with a little bit of dry ranch dressing mixed in. I had one heck of a time finding the recipe. Is it in Tried and True? If it isn't, it should be. The chicken breasts were huge, so I marinated them overnight, then cut them in half to grill.

I also want to make the Chinese Sticky Ribs you posted, but my budget dictates that I will have to use chicken thighs. smileys/smile.gif Thanks!

Spicy Pineapple Marinade For Chicken

Amount Measure Ingredient -- Preparation Method

1/2 medium ripe pineapple -- peeled -- cored, -- coarselychopped

2 jalapeno chilies -- seeded -- chopped

2 garlic cloves -- minced

1 cup unsweetened pineapple juice

1/2 cup fresh lime juice

1/4 cup chopped fresh cilantro

1 teaspoon grated lime peel

8 chicken breast halves -- (with skin and--

bones)

2 teaspoons salt

1 teaspoon freshly ground black pepper

2 tablespoons honey

Puree pineapple, jalapenos and garlic in blender until almost smooth. Add

pineapple juice, lime juice, cilantro and lime peel and process until blended. Pour marinade into large glass baking dish. Add chicken, turn to coat. Cover and

refrigerate 4 to 6 hours.Prepare barbecue or preheat broiler. Remove chicken from marinade.Season with salt and pepper. Pour 1/2 cup marinade into small bowl. Whisk inhoney. Brush mixture over chicken. Season chicken with salt and pepper. Grill or broil until cooked through, turning frequently and basting with honey marinade, about 30 minutes.

Chinese Sticky Ribs

 
The canning process uses enough heat to inactivate the enzyme. Slightly cooking fresh

pineapple or the juice does the same thing. This also works for dishes that contain dairy and pineapple (bromelain breaks down the casein protein in milk, resulting in an offputting bitter flavor).
