Very interesting! But......

I'm reading the list of ingredients, and find only 3 cheeses. Then in the directions, she tells you to fold in the cheddar......Uh, what cheddar? Anyone want to guess how much might be a good amount?
Another recipe in the article that I thought sounded good was the roast chicken with a kick.

Okay - wish me luck - here I go with the Macaroni & Cheesecake...

I'll let you know on the cheese - found another similar recipe and going to just use about the total amount of cheese they used since they used all cheddar with the cream cheese.

 
Something else wrong with recipe - hold off trying....

I put in two cups of cheddar so we'll see. Might be a little too much cheddar. Got one in the oven right now.

HOWEVER - this must make two cheesecakes or else one heck of a large springform pan is needed. I put the remaining filling in the fridge until after lunch and I figure out what to do with it.

Also, I think the crust mixture was a little dry and could use a tad more butter to hold it together.

I'll keep you all informed of how it turns out.

 
MCM, thanks for the update. When I was reading through

the recipe, I too thought there was too much for the pan. Let us know how it turned out. I've got this in my curiosities file.
